I've made this three times now and it's so delicious. And so simple! You just throw everything in a bowl and let it sit (I let it sit for an hour). Make this for your families! LOL

And I was craving Tapioca pudding, so I'm making the filling from this recipe tomorrow:

Orange flavored tapioca pudding sounds heavenly.

I love corn salad in the summer! I couldn't find a tasty photo, but we make this all the time and I highly recommend it - I sprinkle feta cheese in mine, too -

(I originally found the recipe in a magazine way back in 2006 or 2007, exactly the same - this blog author definitely did not invent the recipe herself. :P )

(I usually use frozen corn because I am busy and/or lazy. And I skip the onions.)

Can I just give Rachel Ray a few well-placed slices and rub the lime juice and salt in her wounds? PLEEEEEEEEEEZZZZZZZZZZZZZ?!

My first-world gripe about this drought is what it's done to the Daviess County (hi Ygrii) sweet corn crop. The ears are tiny and not particularly juicy (surprise surprise). At this time of year I'd be at our Farmers' Market first thing tomorrow morning buying two dozen ears then spending the afternoon tending my smoker. Fresh sweet corn done to a light bronze over hickory smoke coming up around a bowl of beer, apple cider, and chopped onion is amazing. I shuck most of the corn and freeze it for late winter bowls of coconut milk-smoked corn soup with chilis and freshly fried tortilla strips. Mmmmm.

I know, I know, it's Rachel Ray, but this salad is extremely tasty and super easy. I used the frozen grilled corn from Trader Joe's last night and it was wonderful.

Corn out here is beautiful. But we're really not any drier than usual.
