I made "Plantation Blackeyes" tonight for New Year's Day. I followed a recipe that was in the bag of black eyed peas I bought from the farmer's market. It was delicious! I ate it with some steamed cabbage.

Here are the peas, all soaked and ready to go:





First I rendered the bacon and cooked down the onions:



And then I added the tomatoes and herbs and water and cooked for an hour (they needed about 15 minutes more):



Then I added some cheese and baked, here it is done!




There wasn't a whole lot of fat per serving, since it was only four slices of bacon and 1 1/2 cup cheese for the whole thing. We didn't eat anything other than this or cabbage so it is a healthy and moderate fat meal. If anyone wants the recipe, let me know.

Thank you! It was delicious and nutritious. And it was wonderful with the cabbage. That was a good choice. I almost chose cauliflower, but cabbage was better.
