I was on a quest to make low fat cornbread, and I found a few recipes and cobbled this together and it was so good!

1 cup cornmeal
1 cup flour
1 tsp salt
1 tsp baking soda
2 eggs, beaten
1 cup yogurt
3 tbsp Agave Nectar (this is a low glycemic sugar) (the original recipe said 1/4 cup white sugar)
2 chopped canned jalapenos (2 whole peppers, no seeds)
1/2 can of corn (drained)

Mix the dry ingredients in a bowl, and in a separate bowl beat the eggs, then add the yogurt, agave nectar and jalapenos and mix well. Add the wet bowl to the dry bowl and stir gently with a spatula until JUST mixed, then fold in the corn. Bake at 400 in a greased 8 x 8 glass pan for 20-25 minutes.

I also made ham and bean soup with the ham bone I found and these HUGE lima beans from the Polish store in LA. OMG these beans are expensive but they are so good and they are literally the biggest beans I have ever seen. So flavorful!
